| 1: In a large bowl, toss the cherries, sugar, cornstarch, lemon juice, cinnamon, and nutmeg to combine thoroughly. |

| 2: Line a pie plate with one prepared pie crust. |

| 3: Pour the cherries into the pie plate. |
|
| 4: Slice remaining pie crust into strips and cover pie with woven lattice. |
|
| 5: Brush the top of the dough with egg and sprinkle with sugar. |

| 6: Bake for 20 minutes at 400°. |

| 7: Turn the heat down to 350° and bake for an additional 30-40 minutes, or until the crust is golden brown and the filling is bubbling. |

| 8: Allow the pie to cool for 6 hours or overnight before serving. |
