Vegan Walnut Chili

Ingredients:

• 1 Can Pinto Beans or Red Beans, drained and rinsed
• 1 White Onion, Chopped
• 2-3 Cloves garlic, minced
• 1 Green Bell Pepper, chopped
• 1 Red Bell Pepper, chopped
• 1 Can Diced or Crushed Tomatoes
• 1 Cup Raw Walnuts, soaked and blended
• Chili Seasonings to Taste (Chili Powder, cumin, Paprika, Salt, Pepper)
• Avocado Oil for sautéing

Prep Steps:

1: Soak the raw walnuts in water for at least 30 minutes.
2: Drain them and blend until crumbly.

Steps:

1: Sauté the vegetables in a large pot in a little avocado oil until fragrant and softened.   
2: Stir in the blended walnuts, mixing well with the vegetables.   
3: Add the beans and tomatoes and stir together.   
4: Add your favorite chili seasoning profile.   
5: Let the chili simmer on low heat for about 20-30 minutes, stirring occasionally.   
6: Taste and adjust to your preferences.
