| • 1 Can Pinto Beans or Red Beans, drained and rinsed |
| • 1 White Onion, Chopped |
| • 2-3 Cloves garlic, minced |
| • 1 Green Bell Pepper, chopped |
| • 1 Red Bell Pepper, chopped |
| • 1 Can Diced or Crushed Tomatoes |
| • 1 Cup Raw Walnuts, soaked and blended |
| • Chili Seasonings to Taste (Chili Powder, cumin, Paprika, Salt, Pepper) |
| • Avocado Oil for sautéing |
| 1: Soak the raw walnuts in water for at least 30 minutes. |
| 2: Drain them and blend until crumbly. |
| 1: Sauté the vegetables in a large pot in a little avocado oil until fragrant and softened. | |
| 2: Stir in the blended walnuts, mixing well with the vegetables. | |
| 3: Add the beans and tomatoes and stir together. | |
| 4: Add your favorite chili seasoning profile. | |
| 5: Let the chili simmer on low heat for about 20-30 minutes, stirring occasionally. | |
