Refried Beans

Ingredients:

• ½ bag pinto beans
• 1 Tbs salt
• 1 tsp cumin
• 1 tsp paprika
• ½ cup diced onion
• 1 clove garlic, minced

Prep Steps:

1: Sort and rinse the beans. Soak them overnight.

Steps:

1: Pour off the beans' soaking water and rinse again. Add fresh water to have an inch of water above the bean level.   
2: Bring to a boil over medium high heat.   
3: Reduce to a simmer. Add the other ingredients.   
4: Cover and simmer (bubbling) for three hours, stirring often. If needed, add water. (Be sure the water always covers the beans.)   
5: Mash the beans with a potato masher or something comparable.   

Comments:

In some parts of the world, you can't easily get these in cans — or even in Mexican restaurants. (I'm looking at you, Cabo!)
