| 1: Pour off the beans' soaking water and rinse again. Add fresh water to have an inch of water above the bean level. |

| 2: Bring to a boil over medium high heat. |

| 3: Reduce to a simmer. Add the other ingredients. |

| 4: Cover and simmer (bubbling) for three hours, stirring often. If needed, add water. (Be sure the water always covers the beans.) |

| 5: Mash the beans with a potato masher or something comparable. |

In some parts of the world, you can't easily get these in cans — or even in Mexican restaurants. (I'm looking at you, Cabo!)
