Gluten-Free Pan de Muertos

Ingredients:

• ¼ cup almond milk
• ¼ cup butter
• ¼ cup warm water (110°F/45°C)
• 3 cups King Arthur all-purpose gluten-free flour (no xanthan gum)
• 2 tsp Xanthan gum
• 2 tsp Bread machine yeast
• ½ tsp salt
• 2 tsp Anise seed
• ¼ cup White sugar
• 3 Eggs, beaten
• Zest of one orange

Steps:

1: Melt the butter in the milk in the microwave at about 30%-40% power.   
2: Add the water, with the goal of the end temperature being about 110°F.   
3: Pour liquid into the bread machine pan.   
4: Add eggs, salt, and sugar.   
5: Alternate adding ⅓ of the flour with ½ the xanthan gum, ½ the anise seed, and ½ the orange zest until all are added.   
6: Level the top in the pan, and sprinkle on the 2 tsp yeast.   
7: Set the bread machine for a "normal" 1½-pound (750g) loaf.   

Comments:

This needs a boat-load of experimenting with the water amount. We have only made it once, and had to add probably another quarter cup of water while it was kneading to get a good texture.
