Pan de Muertos

Bread

Ingredients:

• ¼ cup milk
• ¼ cup water at 110°F/45°C
• ¼ cup butter
• 3 cups all-purpose flour
• ¼ cup sugar
• 2 tsp anise seed
• 1¼ tsp active dry yeast
• ½ tsp salt
• 2 large eggs, beaten
• 1 Tbs orange zest

Bread Machine Instructions:

Steps:

1: Put milk, water, and eggs into bread machine pan.   
2: Add dry ingredients except butter, yeast, and zest on top of the liquids.   
3: Cube butter into about 12 or 16 pieces, and distribute over the dry.   
4: Sprinkle the orange zest over the dry, avoiding the center.   
5: Make a small well in the center and put the yeast in it.   
6: Set bread machine for 1½-pound loaf and set to start. (The timer can be used, but remember that there's milk there.)

Steps:

1: Heat oven to 350°F (175°C).   
2: Heat milk and butter in a medium saucepan over low heat until butter melts. Remove from heat and add warm water. Mixture should be around 110°F (43°C).   
3: Turn dough out onto a lightly floured surface; knead until smooth and elastic. Place dough into a lightly greased bowl. Cover with plastic wrap and let rise in a warm place until doubled in size, 1 to 2 hours.    
4: Punch dough down and shape into a large round loaf with a round knob on top. Place dough onto a baking sheet; loosely cover with plastic wrap. Let rise in a warm place until just about doubled in size, about 1 hour.   
5: Bake in the preheated oven until golden brown, 35 to 45 minutes. Cool slightly before brushing with glaze.   

Glaze

Ingredients:

• ¼ cup sugar
• ¼ cup orange juice
• 2 Tbs orange zest
• 2 Tbs sugar

Steps:

1: Combine ¼ cup sugar, orange juice, and orange zest in a small saucepan.   
2: Bring to a boil over medium heat and boil for 2 minutes.   
3: Brush glaze over top of warm bread. Sprinkle with 2 tablespoons sugar.
