Vegetarian Onion Gravy

Ingredients:

• 5 Tbs butter
• ½ cup finely diced yellow onion
• ¼ cup all-purpose flour
• 2 cups veggie broth (preferably low-sodium)
• 1 Tbs soy sauce or tamari
• Salt and pepper to taste

Steps:

1: Melt the butter in a medium saucepan over low heat.   
2: Add the onion and a pinch of salt. Sweat the onions until tender, stirring occasionally. Do not sauté/brown them. You want translucent and tender, not golden.   
3: Increase the heat to medium. Stir in the flour and cook, stirring frequently, for about 3 minutes.   
4: Gradually stir in the vegetable broth and continue stirring over medium heat until thickened. The original recipe says 3-4 minutes, but it will be longer.   
5: Stir in the soy sauce, and add salt and pepper to taste. (Go easy on the salt if you don't have low-sodium broth.)
