| • 1 chopped onion |
| • 1 cup corn |
| • 30 ounces black beans (drained and rinsed) |
| • 2 cans diced tomatoes (regular or with diced chilis) |
| • ½ tsp chili powder |
| • 2 cloves garlic, minced |
| • ½ tsp dried oregano |
| • 1 cup (or so) veggie broth |
| • 1 Tbs butter |
| • ½ cup honey |
| • 2 cups white rice, cooked |
| • Salt and pepper to taste |
| 1: Sauté the chopped vegetables and butter. | |
| 2: Add spices, honey, and broth. | |
| 3: Heat to boiling. Simmer a bit. | |
| 4: Serve over rice. |
