Vegetarian Onion Gravy
Ingredients
- 5 Tbs butter
- ½ cup finely diced yellow onion
- ¼ cup all-purpose flour
- 2 cups vegetable broth (preferably low-sodium)
- 1 Tbs soy sauce or tamari
- Salt and pepper to taste
Preparation
- Melt the butter in a medium saucepan over low heat.
- Add the onion and a pinch of salt. Sweat the onions until tender, stirring occasionally. Do not sauté/brown them. You want translucent and tender, not golden.
- Increase the heat to medium. Stir in the flour and cook, stirring frequently, for about three minutes.
- Gradually stir in the vegetable broth and continue stirring over medium heat until thickened. The original recipe says 3-4 minutes, but it will be longer.
- Stir in the soy sauce, and add salt and pepper to taste. (Go easy on the salt ifyou don't have low-sodium broth.)
