Vegetarian Onion Gravy

  1. Melt the butter in a medium saucepan over low heat.
  2. Add the onion and a pinch of salt. Sweat the onions until tender, stirring occasionally. Do not sauté/brown them. You want translucent and tender, not golden.
  3. Increase the heat to medium. Stir in the flour and cook, stirring frequently, for about three minutes.
  4. Gradually stir in the vegetable broth and continue stirring over medium heat until thickened. The original recipe says 3-4 minutes, but it will be longer.
  5. Stir in the soy sauce, and add salt and pepper to taste. (Go easy on the salt ifyou don't have low-sodium broth.)
