Hard Boiled Eggs

Preparation

  1. Cover eggs in cold water in a pan.
  2. Heat on high until water just reaches a boil, and the eggs start dancing a little. Do not bring to a rolling boil.
  3. Remove from heat and immediately cover. Let sit 17 minutes.
  4. Pour off water. Rinse (at least) twice with cold water.
  5. Peel and eat.
