Bumblebee Stew
Ingredients
- 1 Chopped Onion
- 1 cup corn
- 30 ounces black beans (drained and rinsed)
- 2 cans diced tomatoes (regular or with diced chilis)
- ½ tsp chili powder
- 2 cloves minced garlic
- ½ tsp dried oregano
- 1 cup (or so) veggie broth
- 1 Tbs butter
- ½ cup honey
- 2 cups white rice, cooked
- salt and pepper to taste
Preparation
- Saute the chopped vegetables and butter.
- Add spices, honey, and broth.
- Heat to boiling. Simmer a bit.
- Serve over rice.
